Made with Tribe Ranch Akaushi Wagyu beef, our Ground Beef Wellington combines rich, flavorful beef with onions and flavorful seasonings, all wrapped in flaky puff pastry. Golden, savory, and effortless—an elevated meal made simple.
Ingredients

1 lb Tribe Ranch Ground Beef

1 tbsp olive oil
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 tbsp Worcestershire sauce
-
1 tsp dried thyme
-
½ tsp salt
-
¼ tsp black pepper
-
1 egg, beaten
-
1 sheet puff pastry, thawed

1 egg yolk, beaten (for egg wash)

Fresh parsley, chopped (for garnish - optional)
Instructions
The Filling:
Preheat your oven to 400° F (200° C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat.
Once pan is heated, add the chopped onion and garlic, and sauté for about 2-3 minutes until softened.
Cooking Tribe Ranch Ground Beef:
Add ground beef to the skillet and cook. Chop beef up in skillet in small pieces with your cooking utensil, until fully cooked, about 6-7 minutes.
Stir in Worcestershire sauce, dried thyme, salt, and black pepper. Cook for another 1-2 minutes.
Once ground beef mixture is well mixed and cooked, remove from the heat and let cool.
Combine the Filling:
In a large bowl, combine the cooked beef mixture with breadcrumbs and the beaten egg. Mix well.
Assembly:
While ground beef mixture is cooling, get your pastry puff and put flour on top and bottom.
Stretch the dough to get it thin and large enough for beef mixture.
Place pastry puff onto a cooking sheet, this will help with the transfer.
Put ground beef mixture on pastry puff and wrap, sealing the edges.
Place the sealed edge on bottom.
Egg Wash:
Using a bread knife, cut slightly on top of puff pastry to allow expansion.
Gently apply your beaten egg yolk on top of the puff pastry, this will give a nice golden and crunchy finish.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the pastry puff is golden brown.
Remove from oven and let rest.
Serve:
Slice the Beef Wellington into personal servings and garnish with parsley (optional). Serve with roasted carrots, salad, mashed potatoes, or whatever side dish you desire.
